Champagne PIAFF comes from one of these early families in the heart of the Champagne region, Epernay. International Chef’s Day at the Villa
Sun International and the Villa Del Palazzo Restaurant at The Palace of the Lost City would like to invite you to join Ricardo Nomdoe, Chef de Cuisine, Thato Goimane, Head Sommelier and Jerome Barret, Directeur General of Champagne PIAFF who will be flying in specially for the occasion, bringing some vintages that he has specially selected from the cellar, on the 20 October 2011.
The 20 October also happens to be International Chefs Day and in honour of this auspicious occasion Sun City is launching a branch of The South African Chefs Association. President of the Chefs Association, Stephen Billingham will be at the launch.
The evening will commence with liquid gold in a glass – the PIAFF Brut. The PIAFF Brut will be served with a light quail salad accompanied with sweet potato, red cabbage shoots and celeriac chips. The champagne is fresh and well balanced and perfectly enjoyed as an introduction to a menu of opulence, decadence and pure indulgence.
What’s on the Menu
The poached rock lobster with an avocado and citrus fruit salad drizzled with a papaya seed champagne dressing will be served with the PIAFF Grand Cru Blanc de Blanc – a superb, elegant Grand Cru with minerals and white flower aromas in perfect balance leading to a lemon citrus finish.
A sorbet of Mango with mint crème will break the extravagance of tastes before the PIAFF Vintage Brut will be poured to complement the pan-roasted duck breast with duck leg and leek dumplings, an orange compote, crispy sweet potato and a dark, bitter chocolate jus. The Vintage Brut balances this dish with its red and black fruits and marmalade on the nose revealing a chocolate coffee finish.
To complement the season, the PIAFF Brut Rose with its generous summer time blush reveals fresh strawberry aromas leading to a clean vanilla finish will be served with a caramelised pear with honey pine nuts and strawberry mille feuille.
